Taste: Full bodied mature cheese hit with prevailing and moreish cheesy tang

Pairing: When considering wine pairings approach it as you might a cheese board. Think fresh green grapes to refresh the palate and bring out the underlying richness of the milk. Marsanne and Roussanne, Pinot Grigio from Collio or Friuli Colli Orientali are all delicious picks.
