The tanks are filled by gravity without crushing the grapes. Cold maceration of the whole berries is performed from 5 to 8 days at 12 - 14 oC to achieve the desired colour and fruit extraction. Alcohol fermentation with addition of selected yeast strains is controlled at 26-28 oC during 8-10 days, in order to reach 3-4 g/l residual sugar. The regularly pump over and pigeage are done in order to conduct a slow extraction from the grapes and to achieve the desired balance in the wine. Malolactic fermentation continues in tanks followed by ageing in oak barrels.

DOMAINE BESSA VALLEY, OGNYANOVO VILLAGE

THRACIAN VALLEY, BULGARIA

Domaine Bessa Valley is one of the first major foreign investments in the Bulgarian wine industry in the early 2000s by Count Stephan von Neipperg (owner of a few châteaux in Bordeaux, France). It is located about 150 km Southeast of the Bulgarian capital Sofia, near the city of Plovdiv. The valley borders with the Rhodope Mountains on the South, and with hills of 230 m above sea level on the North, which offers an ideal location. The soils are predominantly clay and limestone. The added benefit is the temperature regulating influence of the Maritsa River, which flows a few kilometers away. The wines from these great clay-limestone soils provide power and structure, but also good acidity and minerality to the wines. A very particular attention was paid to the selection of rootstocks, well-suited to the type of soils it has been planted on. Merlot is the majority (53%) of the vineyards, with the other vineyards with Syrah (25%), Petit Verdot (12%) and Cabernet Sauvignon (10%) occupying the upper parts of the hills.

“I would serve this happily (especially blind, to Bordeaux enthusiasts) any time over the next years. It strikes me with its excellent value!” Jancis Robinson OBE MW

“I believe this is the philosophy of a Bordeaux resident – the intelligent blending of different grape varieties creates a richer, more complex and harmonious wine. Today, many wines are sold labelled as Cabernet Sauvignon, Chardonnay... However, this is not what my wine culture is about.” Count Stephan von Neipperg
