Produced from vineyards on the slopes of the Loire River and is a complex wine with great finesse, an everyday price, that is Sancerre in all but name.
The “Les Beaux Jours” cuvée is produced on the clay-siliceous hillsides along the banks of the Loire at Bonny and Beaulieu, in the heart of the Coteaux du Giennois appellation.
The grapes are harvested mainly by hand are vinified entirely in vats, to preserve the maximum of their aromatic potential, as well as their freshness.
The musts resulting from the first pressings are left to decant cold for at least 48 hours. The alcoholic fermentation then takes place in temperature-controlled vats. Aging on total fermentation lees then continues until the beginning of March. After the first racking, a light fining with clay makes it possible to obtain a limpid and stable wine for bottling.
