The Domaine
Located on the heights of Solutré-Pouilly, the estate on which I work was created by my great-grandfather Léon in 1929.
My grandfather Georges and my father Marc succeeded him, each contributing expansion, modernization, development and marketing.
Today, my estate represents 6 ha producing dry white wines (Pouilly-Fuissé, Saint-Véran, Mâcon blanc and Bourgogne-aligoté) and a red wine (Mâcon-Serrières).
It is sold in bulk, in bottles (37.5cl, 75cl and 1.5l) and in Bag in Box.
In order to leave only a tiny imprint on the environment and in a concern of respect, the estate began at the end of 2010 the construction of a cuvage. The construction and insulation materials were chosen with rigor.
The management of water and energy saving has been studied with particular attention. Rainwater is collected and stored in tanks provided for this purpose. The water from cellar effluents is also recovered and fully treated.
Vinification
The wines are aged and vinified in oak tuns. These are equipped with a modern thermoregulation system to control the monitoring of fermentation.
For the sake of quality and traceability, the wines are regularly monitored by a qualified oenologist.
Bottling is carried out at the estate. The bottles are then stored in a cellar under temperature and hygrometry control.
The work of the vineyard is carried out in the traditional way.
The manures are managed solely according to the needs of the soil and the plant. For this, soil analyzes are carried out very regularly. Compost, organic matter of animal or biological origin are mainly used.
The plowing of the soil and the scratching allow to bury the manure and to aerate the soil to optimize the microbial life. Thus, the structure of the land is preserved and the wines can express all their typicity. During compulsory treatments, natural products such as sulfur are preferred.
Some years, green harvests are practiced, in order to obtain a maximum natural concentration of the remaining grapes.
Bottle Notes
Made from the Chardonnay grape variety, it is a rich and powerful wine, pleasant in the first years, it will develop aromas of honey and then flint as it ages.
It goes perfectly with fish, frogs, shellfish as well as all meats in white sauce.
