Grape: 100% Riesling, handpicked fruit from the Brookby Hill & Jomara vineyards in the Southern Valleys, loess over clay soil, in organic conversion since 2020, medium dry style (24g/l RS), unoaked.
Aromas of Kaffir lime, lemon and Jasmine blossom are mixed with hazelnuts and a touch of spice. The palate is bright and pure with a beautiful grainy texture, honeysuckle, and ripe citrus flavours. This waxy textured riesling has great concentration and a lovely balance of sweetness and mouth-watering acidity.
Partially whole bunch pressed and then fermented cool in stainless steel. The fermentation was stopped when the sweetness and acidity were in perfect balance. The wine then rested on fine lees for two months to gain texture and palate weight.
