BOTTLING NOTE
The Capreolus distillery is doing very exciting work in the world of eaux de vie, producing a selection of expressions with meticulous attention to detail. This particular bottling of pear eau de vie was made with perry pears (specifically the Butt variety of perry pear) harvested in 2016 from a single tree near the River Severn. The pears were allowed a slow wild yeast fermentation and slowly distilled to capture the flavour of the fruit brilliantly.
Tasting Note
Obvious fresh, fruity notes of pear appear, but behind that you can find a rich earthiness alongside a touch of dried grapefruit peel and cedar.
