The Deen Vat range is a tribute to Deen De Bortoli, a true visionary in the Australian wine industry, whose mission was to create quality wine for everyone to enjoy. This unorthodox blend of Shiraz, Durif, and Cabernet Sauvignon captures the essence of each variety and combines for a wine with great personality. Bright red with a garnet hue. Blueberry fruits, chocolate with hints of cedar spice aromas. The generous palate has an abundance of dark fruits, structuring tannins and a hint of dark chocolate.

Viticulture

2019 saw late spring rains allowing the vines to prosper following a relatively dry winter. Lower than average yields and a significantly earlier harvest allowed for good varietal flavour development and balanced acid.

Vinification

Fruit was harvested in the cool of the morning to maximise fruit freshness. Upon reception at the winery, the fruit from each variety of each region kept separate and was carefully destemmed into Potter fermenters where the individual parcels underwent a cool ferment for a total period of 6 to 10 days. Pressed off at dryness, the wine was then put into a selection of new and older American and French hogshead barrels for 12 months. A multi-regional wine that captures the essence of each variety from the regions the fruit is sourced. Spicy Shiraz from Heathcote, the rich Durif from Riverina along with the cool climate Cabernet Sauvignon from the Yarra valley make for a harmonious blend.

Maturation

The wine was put into a selection of new and older American and French hogshead barrels for 12 months.

Pair with your favourite Roast, Lamb Shanks or a delicious Ragu.
