Tasting Note and Food Pairing
Pale yellow, bright illuminating the glass. The aroma is elegant with flavours of pineapple, apricot and chamomile which are combined elaborately with vanilla, nuts and oak. In the mouth, full bodied with crisp acidity that integrates nicely allowing the fruit to be properly expressed. The finish is long, leaving you a wonderful aftertaste with apricot and vanilla hints.
The Estate
DIAMANTAKIS winery was founded in 2007 by the family members of Nikolaos G. Diamantakis: Ioannis, Michalis and Zacharias. The first two ones are third-generation vine-growers who have extensive experience in viticulture and are in charge of the winery’s vineyards; whereas Zacharias, having studied oenology, is involved in the process of winemaking and promoting the wine. It is located southwest of the city of Heraklion, outside the village of Kato Assites. The region has a long history in vine cultivation and the production of wines and spirits.
Winemaking
It is a blend of 50% Assyrtiko - 50% Vidiano. Assyrtiko is a very popular Greek variety whereas Vidiano is the most upcoming Cretan variety. Vinification is carried out in stainless steel tanks, separate for each grape variety. The alcoholic fermentation is completed in oak barrels where the wine matures on its fine lees for three months. We use 80% of French oak and 20% of American oak.
