GRAPES: 50% TOURIGA NACIONAL (19 YEARS OLD VINES), 30% TINTA RORIZ (YOUNG VINES), 20% TOURIGA FRANCA (19 YEARS OLD VINES).
THE GRAPES WERE HARVESTED MANUALLY WITH THE GRADUATION OF THE 14.5TH BAUMÉ. FERMENTATION TAKES PLACE IN GRANITE TREADING VATS WITH A CAPACITY OF 5000 KG. THE GRAPES FERMENTED FOR 5 DAYS, USING TRADITIONAL FOOT TREADING. THE FERMENTATION TEMPERATURE RANGED BETWEEN 22 AND 25 ° C. THE FERMENTATION WAS INTERRUPTED WITH THE ADDITION OF WINE SPIRIT (BRANDY) WITH 77% ALC.
STAGE: SIX MONTHS IN STAINLESS STEEL TANKS WHERE IT UNDERGOES THE NATURAL DECANTING PROCESS. FROM THERE, THE WINE IS TRANSFERRED TO WOODEN TANKS WITH A CAPACITY OF 5000 LITERS IN A REDUCING ENVIRONMENT WHERE THEY ARE KEPT FOR ABOUT 4 YEARS.
