Made with 100% pinot noir from the Crouch Valley, this pink wine is complex, refined and weighty enough to pair with food as well as drinking beautifully with only the sounds of summer. Red fruit (redcurrant and wild strawberry) abound, but matched with our benchmark mineral structure and a refreshing (but not high) acidity. A mid salmon colour and lovely creamy mouthfeel - this really is a top-quality wine.
We treated it to many of the same premium processes as our red and white wines: gentle handling, fermentation and a 6-month maturation in stoneware and old French oak. This preserves the fruit while developing complexity and structure.
