Freedom of the Press Pinot Gris
Freedom of the Press, Pinot Gris
Bottle notes
The, grapes come from two Essex vineyards, the majority come from Msartin’s Line in the Crouch Valley, the smaller potion from Bromley Brook vineyard, near Colchester. They were destemmed, not crushed, and gravity fed to the press where they received a gentle press cycle. The wine was fermented to dryness in a combination of old Burgundian oak (30%) and concrete egg (70%) over two weeks. After fermentation the wine was put in the Egg to age on its lees for 8 months. About 33% of the wine has undergone malolactic conversion, slightly changing the acid profile to a softer lactic acid. Low sulphite additions, and only light fining to preserve flavour.
The wine is closed with a Diam 5 cork. This is an extremely high-quality natural product engineered to resist taint and to provide predictable and consistent aging parameters, preventing premature oxidation.
Notes
On the nose and palate of white stone fruit, pear and flowers, threaded with a touch of spice.
Tasting notes
The palate is elegant: a hint of emerging honey (will develop in bottle), some mineral, balanced by a fine citrus acidity, spice and a long finish. It is a wine that is drinking well now and will keep for a year or two developing more mid palate complexity.
The 2020 vintage of this wine was extremely popular and sold quickly. This vintage shares many characteristics, but reflects the condition of ‘21, producing a more elegant wine.
Food matching
Sufficient weight and texture to match moderately rich dishes including rich white meat, creamier pasta dishes and gratins. Awesome with chicken pie.
