INTRO TO HOLLICK CABERNET SAUVIGNON

Hollick Cabernet Sauvignon is a full flavoured yet stylish wine with deep herbaceous fruit and long finish.

FULL TASTING NOTE AND WINE MAKING

Hollick Cabernet has vibrant sweet herbaceous notes with touches of caramel. On the palate there is much well balanced fruit with firm structured tannins. The supple structure of this wine enables it to be consumed now, although 5 to 10 years in a good cellar will be amply rewarded.

Hollick Cabernet Sauvignon is made from a selection of fruit from older Cabernet Sauvignon vines. It is grown on shallow terra rossa soils in the Neilson’s Block and Wilgha vineyards in Coonawarra, which were planted in the 1970’s and 1980’s.

There was a cool growing season and above average winter rains leading into the 2017 vintage saw the region return to what could be best described as a more traditional Coonawarra vintage. The cooler conditions resulted in bud burst being delayed by up to three weeks, with flowering two weeks later. A mild Summer followed, with a welcome spell of hot days in late January.

In the winery, individual parcels of grapes were handled carefully to retain intense fruit flavours developed in the vineyard. Subsequent maturation in French oak (20% new) provides the 2017 Cabernet Sauvignon with structure and presence on the palate.

THE PRODUCER

The Hollick vineyards are located in Coonawarra and Wrattonbully wine regions which are in the South East of South Australia, known as the “Limestone Coast” Wine Zone. At Hollick they work on the general principle of having a very strong ‘Pride of Place’, which refers to the pride and respect for the role played by the ‘place’ in which the Hollick vineyards are grown, the natural characteristics imparted by the vineyard situation, and the influences which our management practices make to the final product. Three premium vineyard sites give Hollick a diversity of some of the best fruit grown in the Coonawarra and Wrattonbully wine regions.
