Our Philosophy

Great wines are made in vineyards, not in wineries, and from grapes that can slowly grow and ripen in the cool climates that allow them the time to express the hundreds of delicate aromas and flavours that ultimately deliver the fine wines we love.  We only ever make wines from the finest grapes from our own vineyard and tightly control quality at every stage along the road, from planting vines to popping corks.

We make ‘clean, clear’ wines that aim to reflect a sense of time and place in the way the very best Burgundies seek to do.  Our wines will vary year by year and our winemaking will always be minimalist in style allowing as pure a vintage expression of our vineyard as possible.

Searching for Chalk Valleys

Steep chalk slopes, warmed gently through the English summer, and soils poor enough that every year the vines must struggle for survival and produce the most enticing grapes they can.

A rare single parcel, all Pinot Noir sparkling, from our Hillside vineyard.  The long, dry 2019 vintage allowed over 110 days on the vine with rich, macerated summer berries and spices able to shine through in the wine as a result.

Tasting Notes

A beautiful ‘first-pass’ selection of only the very ripest grapes from our first to ripen Pinot Noir and Chardonnays. With 40 months on the lees, fermentation in wood, and a partial-malo this is a unique sparkling finished in both zero dosage and extra brut form. Notes of yellow plums and apricots, ripe red apple skins and raspberries, with a salinity and touches of baking spices on the finish.

Zero Dosage – Bright aromatics of ripe lemon and grapefruit zest, crisp apple and freshly baked sweet pastry. Fine boned and crystalline on the palate with layers of citrus and yellow plum. A pleasing savoury edge of salty minerality, mace and baking spice, lingers on the palate.

Illustration No.1 – The touch of dosage transforms this wine, revealing a juiciness to the orchard and stone fruits, a caramelised aroma to the pastry notes, reminiscent of a fresh apple pie, and a broad weight on the palate, softening the structured edges of it’s twin the Zero Dosage.
