Montes Classic Series, Casablanca Sauvignon Blanc
Bottle notes
A textbook Sauvignon Blanc from the Casablanca Valley – intense aromatics of herbs and freshly cut grass, alongside tropical green fruits and lively acidity.
Vineyard notes
Grapes come from the Casablanca Valley, Chile's first cool climate region. The vineyards are 25-30km away from the Pacific Ocean and as a result, morning fog and cool breezes extend ripening allowing for the development and retention of delicate aromas and acidity, especially important for making aromatic Sauvignon Blancs. All grapes are hand harvested.
Vintage
A rainy winter ensured good accumulations of water reserves which would be useful through the long dry summer. A frost-free spring allowed for good budbreak and fruit set and the cooler than usual summer ensured fruit was able to ripen slowly, conserving excellent levels of natural acidity. Harvest took place in dry conditions seven days later than previous vintages, yielding grapes of good concentration and quality.
Vinification
Grapes were destemmed and cold soaked at 7-10°C for 10-12 hours to extract aromas, before being racked off skins and fermented at 10-11°C in temperature controlled stainless steel tanks for approximately 21 days. The wine sees no oak and is bottled soon after fermentation to retain its aromatic profile.
Producer
Montes was established in 1988 by Aurelio Montes, Douglas Murray, Alfredo Vidaurre and Pedro Grand, with the aim of producing the best wines in Chile from the best regions. Montes wines are consistently good because they are meticulous throughout the entire production process. Montes own 800 hectares of vineyards in Apalta and Marchigüe located in Colchagua Valley as well a single vineyard Zapallar, in the coastal Aconcagua Valley. In this way, they are able to retain full control of everything that is planted, cultivated and picked. The 'Classic Series' wines are all sourced from different regions, chosen to produce the best examples of each variety.
