Bottle notes

Deep ruby colour with violet tinges; pronounced aromas of spices, black pepper and cloves, and red fruits like cherry and raspberries; medium body, elegant smooth tannins, well balanced with a good acidity. Lingering finish of spices and red fruit.

Producer

In its fifth generation, Saolo Leo is based in the Talento wine village of Tan Donaci. The story of this beautiful estate began at the turn of the twentieth century, when Atonio Leo started to vinify, the grapes grown in the vineyards of Masseria Monticello. The winery has en1oyed constant investment over the years and is today a modern winery with a capacity of 20,000hl and a barrel room housing 1000 French and american oak barriques. Mainly indigenous grape varieties are grown in the 80ha of vineyards: Primitivo, Negroamaro, Fiano. The company is certified, Sustainable Practices.

Vinification

The grape harvest takes place in boxes, followed by destemming and the must ferments in steel at a controlled temperature of 27°C for 8-10 days during which daily pumping over is carried out. Fermentation occurs immediately afterwards, malolactic

Maturation

6 months in steel tank.

Food Pairing

The involvement of the typical rusticity of Susumaniello is combined with the Apulian culinary tradition with orecchiette with sauce or turnip tops. Stewed meats and long cooked ragù are embellished by the body of the wine. Excellent in the company of roast meat and game.
