Bottle notes
Bright yellow colour with greenish reflections. Delicate hints of apple, citrus and nuances of white fruits. Fresh and salty, with a long and elegant finish.
Producer
In its fifth generation, Saolo Leo is based in the Talento wine village of Tan Donaci. The story of this beautiful estate began at the turn of the twentieth century, when Atonio Leo started to vinify, the grapes grown in the vineyards of Masseria Monticello. The winery has en1oyed constant investment over the years and is today a modern winery with a capacity of 20,000hl and a barrel room housing 1000 French and american oak barriques. Mainly indigenous grape varieties are grown in the 80ha of vineyards: Primitivo, Negroamaro, Fiano. The company is certified, Sustainable Practices.
Viticulture
4500 plants per hectare and 2.5 kg of grapes per plant
Vinification
Harvest in the early hours of the dawn so as to preserve the aromas and a subsequent soft pressing of the skins. Fermentation of the must with selected yeasts at a controlled temperature of 13 ° for 10 days
Maturation
3 months in stainless steel tank.
Food Pairing
Dishes based on fish, shellfish and seafood, typical of Salento region. Also excellent on its own, as an aperitif or with appetizers based on delicate cheeses, unseasoned cured meats and vegetables.
