Villa Blanche Picpoul de Pinet 2021   

Bottle notes

Beautiful pale yellow color and brilliant. As with all white wines, the 2021 vintage is characterized by very limited volumes but a quality that is there. The nose remains faithful to our Picpoul de Pinet. Subtle on aromas of white flowers, there are notes of anise and a freshly iodized finish. The attack on the palate is lively with a beautiful aromatic palette of exotic fruits, pineapple, dill and fennel. The finish is straight, mineral and a little saline - note the presence of a very pleasant citrus bitterness.

A rather gourmet Picpoul de Pinet that will go wonderfully with seafood and cheese. Let's repeat (contrary to beliefs) that this grape variety evolves very well over time and gains in complexity after one or two years in the bottle.

Winemaking

The grapes are harvested at night to maintain a cool temperature. A short maceration of 2 hours is carried out before pressing. Fermentation takes place around 16°C. The lees are suspended weekly after the alcoholic fermentation for one month. No malolactic fermentation.

Breeding

The wine ages in vats and on the lees for 3 months to give "fat".
